Disney's private island (Castaway Cay) has a family beach area, a teen-only beach, and an adult only beach too. There's also a play area run by the kids' activity center cast members where you can drop the younger kids and they'll be supervised (it's away from the water).
There is quite a variety of excursions offered on the island including snorkeling, parasailing, water biking, etc.
The food on the ships is very good IMHO, but they also remember they have kids onboard and have the "basics" available for the little ones as well (face it, not all kids like lobster bisque or salmon).

I can completely understand where you are coming from ... for some adults the lack of a casino is an issue. Depending on the itinerary, if they call at Nassau you can get a casino "fix" at the Atlantis resort for a few hours, and their Bingo onboard can become somewhat addicting too.
